It should be entered into with abandon or not at all." __Harriet Van Horne ______________________________________Baked Goat Cheese Ingredients: 4 rounds of fresh goat cheese --- each about 2 and 1/2 inches in diameter, 1/2 inch thickness 1/2 cup olive oil 4 sprigs fresh thyme 1 bay leaf, crumbled 1 cup toasted bread crumbs, very finely ground 2 tablespoons balsamic vinegar a dash of red wine vinegar salt and pepper to taste 4 good-sized handfuls of assorted lettuces Instructions: 1) Marinate the goat cheese rounds in 1/4 cup olive oil with the thyme and bay leaf for twenty-four hours. 2) Whisk together the remainin' 1/4 cup of olive oil with the vinegars and season with salt and pepper. 3) Wash and dry the lettuce leaves. 4) Remove the goat cheese rounds from the marinade, then dip 'em in the bread crumbs. 5) Put the cheese rounds in a lightly oiled baking dish and bake in a preheated 450� oven for four to five minutes, or 'til they're golden brown and bubbly. 6) While the cheese bakes, toss the lettuce leaves with the vinaigrette, then 'em arrange on individual salad plates. 7) Put a cheese round in the centre of each plate with the browned side up and serve.
