Buttermilk Onion Rings

Ingredients:
4 large onions, cut into 1/4 inch rings
1 quart butter milk
2 cups unbleached flour
salt and freshly ground pepper to taste
chili power to taste, if desired
canola oil

Instructions:
1) Put the onion rings in a large bowl.
2) Combine buttermilk, salt, and pepper --- then pour over onion rings.
3) Cover bowl with saran wrap and refrigerate for about half an hour.
4) Put the flour in a shallow dish and season with salt and pepper
[and chili powder if desired].
5) Dredge onion rings in flour, re-dip in the buttermilk,
and again in the seasoned flour.
6) Heat canola oil to 350� in a heavy skillet and fry onion rings
in batches for 2 to 3 minutes.
7) Drain on a wire rack over a cookie sheet.
