It should be entered into with abandon or not at all." __Harriet Van Horne ______________________________________Rhubarbed Chicken Ingredients: 3 pounds chicken breasts and thighs or 1 whole chicken cut up 2 cups rhubarb, diced into 1/2 inch pieces 1/3 cup white sugar 1 and 1/2 tablespoons cornstarch 1 and 1/2 cups water 2 teaspoons lemon juice 1/4 teaspoon salt 1/2 teaspoon cinnamon 1/2 teaspoon nutmeg hot, cooked rice Instructions: 1) Preheat oven to 375�. 2) Combine the cornstarch, white sugar, rhubarb, and water in a saucepan. 3) Cook and stir over medium heat 'til the mixture comes to a boil. 4) Continue to cook for about two minutes, 'til it's clear and thickened. 5) Add lemon juice and cool. 6) Place chicken in a shallow bakin' dish. 7) Brush with butter and sprinkle with salt. 8) Bake uncovered for thirty minutes. 9) Spoon rhubarb sauce over chicken. 10) Mix cinnamon and nutmeg and sprinkle it over the chicken. 11) Return chicken to oven and bake 20 minutes longer. 12) While the chicken bakes, whip up a batch of rice. 13) When the chicken is done, put it on top of the rice, spoon the sauce over the top of the chicken, and serve.
