Sweet Potato Salad

Ingredients:
3 to 5 large sweet potatoes, [about 2 pounds]
1/4 cup fresh lime juice [about 4 limes]
2 medium apples --- peeled, cored, and cut into cubes
2 large stalks celery, chopped
1/2 cup coarsely chopped pecans
mayonnaise [homemade is best, but store bought will suffice]

Instructions:
1) Boil the sweet potatoes 'til soft.
2) Drain the potatoes and cool.
3) Cut the potatoes into cubes then put 'em in a mixin' bowl ---
but don't use a metal bowl.
4) Sprinkle potatoes with the lime juice and chill.
5) Add apple cubes, celery, pecans, and enough mayonnaise
to coat well. Chill before servin'.
