Jalapeno Catfish

Ingredients:
2 and a 1/2 pounds catfish fillets
1 and 1/2 cups yellow cornmeal
2 tablespoons finely chopped jalapeno pepper
4 small cloves garlic, finely minced
1 teaspoon salt
vegetable oil for fryin'

Instructions:
1) Rinse and pat the fillets lightly, leavin' a little moisture
so the coatin' will stick.
2) In a pie plate, combine the cornmeal, jalapeno, garlic, and salt.
3) Heat about 1 inch of vegetable oil in a large skillet
over medium-high heat.
4) Dip each fillet into the cornmeal mixture, then place in hot oil.
5) Turn carefully when the fish is browned.
6) Fry 'til the opposite side is browned and the fish just begins to flake when pierced with a fork.
