mushroom and cheddar veggie burgers

It should be entered into with abandon or not at all." __Harriet Van Horne ______________________________________Mushroom and Cheddar Veggie Burgers Ingredients: 4 teaspoons vegetable oil 2 small onions, grated 3 cups mushrooms, finely chopped 1/2 teaspoon dried basil 1/2 teaspoon dried oregano 2 [19 ounce size] cans white kidney beans --- drained and, rinsed 2 egg yolks, lightly, beaten 4 tablespoons dry breadcrumbs 1/2 teaspoon pepper 8 lettuce leaves 8 whole wheat pitas Instructions: 1) Heat the oil in a non-stick skillet over medium-high heat. 2) Cook and stir the onion, mushrooms, basil, and oregano for about eight minutes, or 'til the liquid is evaporated and the mixture is just startin' to brown. 3) Let the mixture cool slightly. 4) In a bowl, mash the kidney beans with fork. 5) Add the mushroom mixture, egg yolk, bread crumbs and pepper to the kidney beans and mix well. 6) Shape into eight 1/2 inch thick patties. 7) Place patties on greased grill over medium-high heat; close lid and cook for about five minutes. 8) Serve in pita pockets with lettuce --- and cheese, if desired.
