It should be entered into with abandon or not at all." __Harriet Van Horne ______________________________________Lenora Ruth's Tropical Zucchini Bread Ingredients: 1 egg 1/2 cup vegetable oil 1 cup white sugar 1 cup grated zucchini 1/2 teaspoon vanilla extract 1 and 1/2 cups all-purpose flour 1/2 teaspoon bakin' powder 1 teaspoon bakin' soda 1/2 teaspoon salt 3/4 teaspoon ground cinnamon 1/2 teaspoon ground nutmeg 1/2 cup flaked coconut 1/2 cup chopped walnuts 1/2 cup currants [or raisins] Instructions: 1) Preheat oven to 350�. 2) Grease a 9 by 5 inch loaf pan. 3) In small saucepan boil one cup water, then add the currants [or raisins], and boil for about two minutes. Drain well. 4) In mixin' bowl, beat together the egg, oil, and sugar. 5) Stir in the zucchini and vanilla extract. 6) In separate bowl, combine the flour, bakin' powder, bakin' soda, salt, cinnamon, nutmeg, coconut, walnuts, and currants [or raisins] and blend thoroughly. 7) Pour the flour mixture all at once over the egg mixture, then stir to moisten. 8) Turn batter into the prepared pan and bake 'til bread tests done, about one hour. 9) Cool in pan for ten minutes, then finish coolin' on a wire rack.
