It should be entered into with abandon or not at all." __Harriet Van Horne ______________________________________Herbed Mashed Potatoes Ingredients: 3 medium sized round white potatoes --- washed and cut into 1 inch chunks 3 medium round red potatoes --- washed and cut into 1 inch chunks 2 bay leaves sea salt 1/2 tablespoon thinly sliced chive blades 1 and 1/2 tablespoons chopped chervil leaves 1 tablespoon chopped thyme leaves 1 clove garlic, crushed 1/4 cup olive oil coarse kosher salt freshly ground black pepper Instructions: 1) Put the potatoes and bay leaves in a large saucepan and cover with cold water. 2) Season the water with plenty of sea salt. 3) Bring the water to the boil, then reduce the heat and simmer fifteen to eighteen minutes. 4) Drain the potatoes and return 'em to the pan, discardin' the bay leaves. 5) Add the remainin' herbs and garlic. 6) Add the olive oil and season with salt and pepper. 7) Lightly crush the potatoes with a big fork and stir to mix all the ingredients. The potatoes should be mashed just enough to bind the ingredients together. Yield: serves 4
