Parsnip Fritters

Ingredients:
3 parsnips
2 eggs
1 tablespoon lard
1 cup whole milk
1 teaspoon salt
3 tablespoons all-purpose flour

Instructions:
1) Boil the parsnips in water just 'til they're tender,
then grate fine and mash.
2) Beat the eggs 'til light.
3) Stir the eggs into the parsnips, then beat vigorously.
3) Add the lard, milk, salt and flour.
4) Drop by spoonfuls into deep fat [the temperature should be
between 350� and365�].
5) Fry for two or three minutes.
