Rice With Mushrooms And Spinach

Ingredients:
1/3 cup butter
2 cups mushrooms, sliced
1 [3 ounce size] package cream cheese, cubed
3 cups cooked rice
2 cups fresh spinach, torn
1/2 cup Parmesan cheese, grated
1/2 cup walnuts, chopped
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper

Instructions:
1) Melt the butter in a large skillet over medium heat.
2) Add the mushrooms; cook 'til soft --- two to four minutes.
3) Add the cream cheese and stir 'til melted.
4) Reduce the heat to medium-low.
5) Add the rice, stirrin' 'til well blended and heated through ---
three to four minutes.
6) Remove skillet from heat..
7) In large bowl, combine the cooked rice mixture, spinach,
Parmesan cheese, walnuts, salt and pepper.
8) Toss well and serve.
