roasted baby carrots

It should be entered into with abandon or not at all." __Harriet Van Horne ______________________________________Roasted Baby Carrots Ingredients: 2 pounds baby carrots 4 small onions --- peeled, cut in quarters, then in half again 6 cloves garlic, peeled and smashed 2 tablespoon extra virgin olive oil 1 teaspoon dried thyme 1/2 teaspoon salt 1/4 teaspoon black pepper 2 teaspoons balsamic vinegar nonstick cookin' spray Instructions: 1) Preheat oven to 475�. 2) Spray an 11 by 13 inch roastin' pan with nonstick cookin' spray. 3) Put the carrots, onions, and garlic in the pan. 4) Drizzle the olive oil over the vegetables, then sprinkle the thyme, salt, and pepper over the top. 5) Toss 'til the vegetables are coated with oil. 6) Bake, uncovered, for about twelve minutes then stir the carrots and continue to bake for twelve more minutes --- stirrin' intermittently, 'til thecarrots begin to brown and are tender when pierced with the tip of a knife. 7) Remove the carrots from the pan and toss with the balsamic vinegar before servin'.
