It should be entered into with abandon or not at all." __Harriet Van Horne ______________________________________Shoebox Cake Ingredients: 1 pound cinnamon and honey graham crackers 2 teaspoons bakin' powder 6 eggs, lightly beaten 2 cups white sugar 2 cups whole milk 1/2 pound butter -- melted 1 and 1/2 cups coarsely chopped pecans 1 and 1/2 cups coarsely chopped walnuts 7 ounces grated coconut Instructions: 1) Preheat oven to 250� 2) Put the crackers in a zip-top plastic bag and crush with a rollin' pin 'til you've got very fine crumbs. 3) In a large bowl combine the graham cracker crumbs and the bakin' powder. 4) Add the eggs, sugar, milk, butter, nuts, and coconut. 5) Blend 'til all the ingredients are thoroughly combined. 6) Line a clean shoebox with waxed paper and pour in the batter. 7) Place the uncovered box on cookie sheet in oven and bake for three hours. 8) Let cool before slicin'. Note: if you don't have a shoebox, you can use a double sized loaf pan instead.
