It should be entered into with abandon or not at all." __Harriet Van Horne ______________________________________Mess O' Vegetables Soup Ingredients: 3 to 6 tablespoons extra virgin olive oil 4 tablespoons vegetable broth 1 cup sliced zucchini 1 cup sliced carrots 1 cup sliced potatoes 1 cup sliced celery 1 cup cauliflower florets 1 cup sliced mushrooms 1/2 cup fresh parsley, chopped 1/2 cup diced onions 2 teaspoons salt 1/2 teaspoon fresh ground black pepper 4 whole bay leaves 2 vegetable boullion cubes 1/2 cup fresh dill weed, chopped 12 and 1/2 cups water 4 cups uncooked egg noodles Instructions: 1) Heat the oil and vegetable broth in a large kettle, then saut� the vegetables for fifteen minutes. 2) Add the remainin' ingredients, except for the noodles, and simmer over medium-low heat for fifteen to twenty minutes. 3) Add the remainin' ingredients, except the noodles, then simmer over medium-low heat for thirty five minutes. 4) Add the noodles and cook an additional ten to fifteen minutes. Note: the cookin' times in this recipe are approximate. You need to keep an eye on the texture of the vegetables and the noodles. Increase or decrease cookin' times dependin' on your preferences.
