It should be entered into with abandon or not at all." __Harriet Van Horne ______________________________________Granny's Lemon Sponge Pie Ingredients: 3 tablespoons butter, softened 1 and 1/4 cups white sugar 4 eggs, separated 3 tablespoons all-purpose flour dash of salt 1 and 1/4 cups whole milk grated peels of 2 lemons the juice of 2 lemons --- should amount to 1/3 cup fresh lemon juice 1 unbaked 9 inch pie shell Instructions: 1) Preheat oven to 375�. 2) In a large mixin' bowl, cream together the butter and sugar 'til light and fluffy. 3) Beat in the egg yolks, flour, salt, milk, lemon peel, and lemon juice. 4) In a separate bowl, beat egg whites 'til stiff but not dry. 5) Gently fold the egg whites into the lemon mixture. 6) Gently turn the fillin' into the pie shell. 7) Bake for five minutes, then reduce the oven temperature to 300� and bake for another forty-five minutes or 'til the top is golden. A wooden toothpick inserted in centre should come out clean. 8) Cool pie on a wire rack prior to servin'.
