white beans 'n greens

It should be entered into with abandon or not at all." __Harriet Van Horne ______________________________________White Beans 'N Greens Ingredients: 1/2 teaspoon salt 1/2 teaspoon freshly ground black pepper 1 and 2/3 cups cannellini beans, cooked --- [or one 15 ounce size can, drained] 1 pound of assorted salad greens 1/2 cup fresh basil, chopped 1 tomato sliced 4 tablespoons olive oil 4 tablespoons red wine vinegar 2 cloves garlic, minced Instructions: 1) In a small bowl or jar, thoroughly combine the olive oil, red wine vinegar, minced garlic, salt, and pepper for dressin'. 2) In a separate bowl, add 1 and 1/2 tablespoons of the olive oil mixture to the beans and thoroughly combine. 3) In yet another bowl, gently toss together the salad greens with the basil and the remainin' dressin'. 4) Arrange the greens on individual salad plates and spoon the beans over the top. 5) Garnish with tomato slices.
