It should be entered into with abandon or not at all." __Harriet Van Horne ______________________________________Parmesan Shrimp Ingredients: 1/2 cup olive oil, divided 1/4 cup fresh basil, minced 1 tablespoon vinegar 1 tablespoon plus 1/2 cup grated parmesan cheese, divided 1/2 teaspoon white sugar 1 pound uncooked jumbo shrimp, peeled and deveined 1/4 cup butter assorted salad greens Instructions: 1) Combine 1/4 cup olive oil, 1 tablespoon vinegar, 1 tablespoon parmesan cheese, and 1 teaspoon sugar in a saucepan over low heat. 2) While the dressin' warms, combine the shrimp with the remainin' parmesan cheese. 3) Heat the butter and the remainin' oil in a skillet, then saut� the shrimp for about four minutes, or 'til it turns pink. 4) Drain shrimp on paper towels. 5) Arrange cooked shrimp atop assorted greens on individual plates and drizzle with warm dressin'.
