It should be entered into with abandon or not at all." __Harriet Van Horne ______________________________________Bluebell Cookies Ingredients: 2 cups all-purpose flour, sifted 2 teaspoons bakin' powder 1/4 teaspoon salt 3/4 cup shortenin' 1 cup white sugar 2 eggs 1 and 1/2 teaspoons grated lemon rind 1/2 cup whole milk 1 cup fresh blueberries Instructions: 1) Preheat oven to 375�. 2) Grease cookie sheets. 3) Sift together the flour, bakin' powder and salt. 4) Cream together the shortenin' and the sugar 'til light and fluffy. 5) Thoroughly beat in the eggs and the lemon rind. 6) Add the flour mixture alternately with milk, beatin' 'til smooth after each addition. 7) Gently fold in the blueberries. 8) Drop the dough by teaspoons full onto greased cookie sheets. 9) Bake for ten to twelve minutes.
