Potato-cado Salad

Ingredients:
2 pounds new potatoes, scrubbed
1/4 cup olive oil
1 and 1/2 tablespoons red wine vinegar
salt
1/2 cup sour cream
1/2 cup plain yogurt
2 tablespoons prepared horseradish
1/4 cup fresh dill sprigs -- loosely packed
1 cup chopped celery
2 medium sized avocados
1 tablespoon fresh lime juice
freshly ground black pepper

Instructions:
1) Steam the potatoes 'til they're cooked through,
then remove from heat and allow to cool slightly.
2) While potatoes steam, whisk together the olive oil and vinegar
in a large bowl.
3) Season to taste with salt, then set aside.
4) Once the potatoes are cool enough to handle,
slice 'em into one inch cubes.
5) Toss the potato cubes in the oil and vinegar 'til they're well coated.
6) Set potatoes aside to cool to room temperature, tossin' occasionally.
7) In a small bowl, whisk together the sour cream, plain yogurt,
and prepared horseradish.
8) Mince the dill and add it to the sour cream mixture, stirrin' well.
9) Once potatoes are cooled, add the celery and toss to combine.
10) Add the sour cream mixture to the potato mixture and toss again.
11) Pit and peel the avocados, the slice 'em into one inch cubes.
12) Put the avocado cubes in a small bowl with the lime juice
and toss 'til the cubes are moistened.
13) Add the avocado cubes and the lime juice to the potatoe mixture, tossin' gently 'til the cubes well distributed and evenly coated with
the dressin'.
14) Add pepper and additional salt to taste.
15) Chill for thirty minutes to an hour before servin'.
