zippy lima bean salad

It should be entered into with abandon or not at all." __Harriet Van Horne ______________________________________Zippy Lima Bean Salad Ingredients: 1 and 1/2 cups fresh cooked lima beans 1 cup cucumber, chopped 2 cups ***Zippy Tomato Salsa Instructions: 1) Prepare ***Zippy Tomato Salsa. 2) Cook and thoroughly drain the lima beans, then combine 'em with the cucumber and salsa in a bowl. 3) Cover the bowl with plastic wrap and refrigerate for at least two hours prior to servin'. 4) Serve on individual plates atop beds of lettuce. ***Zippy Tomato Salsa Ingredients: 4 ripe firm tomatoes, finely chopped 1/2 cup finely chopped red onion 5 scallions, finely chopped 1/2 cup green capsicum, finely chopped 1/4 cup fresh coriander, chopped 1 tablespoon lime juice 1/2 cup sliced black olives 1) Put the tomatoes in a colander to drain while the other vegetables are prepared. 2) Once the vegetables are chopped and the tomatoes are well drained, thoroughly combine all the ingredients in a small bowl. 3) Cover with plastic wrap and refrigerate 'til needed.
