It should be entered into with abandon or not at all." __Harriet Van Horne ______________________________________Minty Beets Ingredients: 6 raw beets, peeled and finely diced 4 white potatoes, peeled and coarsely diced 1 onion, peeled and finely chopped 2 cups water 2 tablespoons butter 1 tablespoon fresh mint leaves, chopped salt and pepper to taste Instructions: 1) Put the beets, potatoes, onion, water, and butter into a stew pan. 2) Cover and cook over low heat for thirty-five to forty-five minutes. 4) Season to taste and sprinkle with mint leaves prior to servin'.
