Happy Monkey Banana Cake

Ingredients:
1 cup butter, softened
3 cups white sugar
2 cups mashed bananas [use heavily speckled bananas]
4 eggs, beaten
3 and 1/2 cups unbleached all-purpose flour
2 teaspoons bakin' soda
1 cup buttermilk
1 teaspoon vanilla extract
2 tablespoons orange juice
1 cup chopped pecans

Instructions:
1) Preheat oven to 350�.
2) Grease and flour three 9 inch round cake pans.
3) Cream the butter with the sugar 'til light and fluffy.
4) Add bananas and mix 'til smooth.
5) Stir in the eggs.
6) Combine the flour and bakin' soda.
7) Add the dry ingredients to the banana mixture alternately with
the buttermilk, beginnin' and endin' with the flour mixture.
8) Mix thoroughly after each addition.
9) Stir in vanilla extract, orange juice, and pecans.
10) Pour the batter into the prepared pans.
11) Bake for thirty-five to forty minutes,
or 'til a wooden toothpick inserted in the centre comes out clean.
12) Cool the layers in the pans for ten minutes, then remove
from the pans and finish coolin' completely on wire racks.
13) Frost the cake with ***Cream Cheese Frostin' and decorate the top
with whole pecans.

Cream Cheese Frostin'

Ingredients:
1 package [8 ounce size] of cream cheese, softened
1/2 cup butter, softened
1 package [16 ounce size] confectioners' sugar, sifted
1 teaspoon vanilla extract
whole pecans for decoration

Instructions:
1) Combine the cream cheese and butter, beatin' 'til smooth.
2) Add powdered sugar and vanilla extract. Beat until light and fluffy.
