It should be entered into with abandon or not at all." __Harriet Van Horne ______________________________________Whipped Parsnips Ingredients: 2 pounds parsnips, peeled and cut into 1/2 inch pieces 1 and 1/2 pounds carrots, coarsely chopped 1/2 cup butter, diced and softened a generous pinch of ground nutmeg salt and freshly ground black pepper to taste Instructions: 1) Bring a large pot of salted water to a boil. 2) Add the carrots, cover partially, and simmer for about five minutes. 3) Add the parsnips, cover partially, and simmer for about fifteen minutes, 'til the vegetables are very tender. 4) Drain thoroughly. 5) Put the carrots and turnips back in the pot, then stir over medium heat just 'til any excess moisture evaporates. 6) Transfer to a large mixin' bowl. 7) Add the butter, then mash and whip 'til smooth. 8) Season with the nutmeg, salt, and pepper. 9) Rewarm over very low heat, stirrin' often.
