Granny's yam cake

Granny's talent for cookin' was almost as breathtakin' as her shine and even folks who were afraid of her due to the latter, grudgingly admired the former. Granny's Yam Cake Ingredients: 1 1/2 cups canola oil 2 cups flour, sifted twice 1 tsp. bakin' soda 3 cups raw yams, grated 2 cups suger 2 tsp. bakin' powder 1 tablespoon cinnamon 4 eggs 1 cup pecans, finely chopped Instructions 1) Preheat oven to 325�. 2) Combine oil and sugar and mix well. 3) Sift together remainin' dry ingredients. 4) Add to sugar mixture, alternatin' with eggs added one at a time. 5) Add grated yams & mix well. 6) Stir in pecans. 7) Pour batter into a greased & floured bundt pan. 8) Bake for 1 hour and 10 minutes. 9) Cool in upright pan. 10) Make a glaze of powdered sugar and orange juice. 11) Remove cake from pan and pour glaze over the top when it's almost cool.
