Fried Green Tomato Sandwiches Ingredients: 8 slices, thick-cut bacon 3/4 cup all-purpose flour I/4 cup stone-ground cornmeal Salt to taste Black pepper to taste 1 cup milk 1/4 to 1/3 cup olive oil, as needed 4 large green tomatoes, sliced 1/4" thick 1/4 cup mayonnaise1 tablespoon chili sauce 8 slices lightly toasted light rye bread plenty of fresh lettuce Instructions: 1) Cook bacon over medium heat 'til just browned and crisp. Drain on paper towelin' and set aside. 2) Strain the bacon grease into a cup and then wipe out the skillet with a paper towel. 3) Combine the flour, cornmeal, salt and pepper in a medium-sized bowl. 4) Add the milk and stir well. The mixture should have the consistency of pancake batter. 5) Add 1/4 cup olive oil to the cleaned skillet along with the strained bacon grease. Set the skillet over medium-high heat. 6) Workin' in batches, dip the green tomato slices in the batter, allowin' any excess drip back into the bowl. 6) Fry battered tomato slices for about 3 minutes per side, or 'til golden brown, addin' more olive oil to the pan as needed. Drain the fried green tomato slices on paper towelin'. 7) Combine the mayonnaise and chili sauce in a small bowl. 8) Spread about 1 1/2 teaspoons of the mayonnaise mixture on one side of all eight slices of toast. 9) Place 2 slices of bacon over each of 4 slices of toast, topped with 2 fried green tomato slices and lettuce. 10) Cover with the remainin' 4 slices of toast, mayonnaise-side down. 11) Cut sandwiches in half and serve immediately.
