B's Beet Cake

Ingredients for cake:
2 cups white sugar
2/3 cup butter-flavored Crisco
2 teaspoons almond extract
4 eggs
2 cups all-purpose flour
2 teaspoons bakin' powder
2 teaspoons ground cinnamon
1/2 teaspoon salt
2 cups raw beets, shredded and packed
1 cup crushed pineapple in light syrup, undrained
1 cup pecans, chopped
1/2 cup flaked coconut
Ingredients for icin':
1 package [3 ounce size] cream cheese, softened
3 cups confectioners' sugar
whippin' cream

Instructions:
1) Preheat oven to 350�. Generously grease a 10" bundt cake pan with butter-flavored Crisco. Flour pan lightly.
2) Cream together the white sugar, Crisco, and almond extract
in a large bowl.
3) Add eggs, one a time, beatin' well after each addition.
4) Combine flour, bakin' powder, cinnamon, and salt in medium bowl.
5) Add dry ingredients to the creamed mixture and blend thoroughly.
6) Fold in beets, pineapple with syrup, nuts, and coconut.
7) Spoon batter into prepared pan.
8) Bake for one hour, or 'til a toothpick inserted in the center
comes out clean.
9) Remove cake from pan and place it [fluted side up] on a
wire rack to finish coolin'.
10) To make icin', combine the cream cheese and confectioners' sugar in a bowl and beat 'til well blended.
11) Continue to beat the icin' 'til it's light and fluffy. If need be,
add whippin' cream to achieve the consistency of your choice.
12) Spread or spoon icin' over the top of the cake.
13) Serve immediately, otherwise, keep this cake refrigerated.
