" __Julia Child "Cooking is a creation." __Piero Selvaggio "'Tis an ill cook that cannot lick his own fingers." __William Shakespeare ______________________________________Apple-stuffed Fish Filets Ingredients: 2 cups Golden Delicious apple, grated and peeled 1 cup carrot, grated 1 cup green onion, minced 4 tablespoons fresh lemon juice 1/2 teaspoon ground ginger 1/2 teaspoon ground mustard 1/2 teaspoon salt 1/2 teaspoon pepper 1/4 teaspoon dried thyme 8 [5 ounces each] sole, cod or other white fish filets 1/2 cup water Instructions: 1) Heat oven to 400�. Lightly coat a small roastin' pan with cookin' oil. 2) Thoroughly combine the apple, carrot, green onion, lemon juice, ginger, mustard, salt, pepper, and thyme in a mixin' bowl. 3) Spread apple mixture evenly over the length of each filet, then gently roll 'em up. 4) Place the rolled filets in the pan with the seam side down. 5) Pour the water over the filets. 6) Cover with aluminum foil and bake for ten to fifteen minutes, or 'til the fish becomes opaque.
