It should be entered into with abandon or not at all." __Harriet Van Horne ______________________________________Cherry Cordial Brownies Ingredients for brownies: 4 [1 ounce size] squares unsweetened chocolate 3/4 cups butter 2 cups white sugar 2 teaspoons vanilla extract 4 eggs 1 and 1/4 cups all-purpose soft wheat flour 1/2 teaspoon bakin' powder 1/2 teaspoon salt 3/4 cup chopped pecans Ingredients for icin': 2 and 1/2 cups confectioners' sugar 1/4 cup butter, softened 4 tablespoons maraschino cherry juice Ingredients for glaze: 1/3 cup semisweet chocolate chips 1 and 1/2 tablespoons butter 1/2 teaspoon vanilla extract Instructions: 1) Preheat oven to 350�. Grease a 9x13" bakin' pan. 2) In a large saucepan over low heat, melt chocolate and 3/4 cup butter, stirrin' constantly. 3) Remove from heat and cool slightly. 4) Put 2 cups white sugar in a large mixin' bowl. 5) Add melted chocolate and 2 teaspoons vanilla extract, stirrin' 'til blended. 6) Add eggs, one at a time, beatin' well after each addition. 7) Combine the flour, bakin' powder, and salt in a separate bowl. 8) Add dry ingredients to chocolate mixture, stirrin' 'til just blended. 9) Fold in pecans. 10) Spread batter in prepared pan and bake for thirty to thirty five minutes, or 'til brownies test done with a toothpick inserted in the center. Be careful not to overbake. 11) Let browines cool completely. 12) In small bowl, combine confectioners' sugar, 1/4 cup butter, and 4 tablespoons cherry juice. 13) Beat 'til smooth. 14) Spread icin' over cooled brownies. 15) In small saucepan over low heat, melt chocolate chips and 1 and 1/2 tablespoons butter, stirrin' constantly 'til smooth. 16) Stir in 1/2 teaspoon vanilla extract. 17) Cool glaze slightly, then drizzle over the cherry icin'. 18) Store uneaten brownies in the refrigerator. Note: 3/4 cup all-purpose plus 1/4 cup raw, unprocessed bran flakes can be substituted for 1 cup of wheat flour but the results leave somethin' to be desired.
