louise's meatless chili

It should be entered into with abandon or not at all." __Harriet Van Horne ______________________________________Louise's Meatless Chili Ingredients: 1 to 2 tablespoons vegetable oil 2 cloves garlic, minced 1 onion, chopped 1 large carrot, chopped 1 jalapeno pepper, seeded and minced 1 green bell pepper, chopped 3 cups chopped tomatoes 2 cans [20 ounces each] black beans, drained and rinsed 1 tablespoon chili powder 1 teaspoon ground cumin 1 teaspoon crumbled dried rosemary 1 teaspoon salt 1 cup grated cucumber Instructions: 1) In a large saucepan, heat the oil over medium heat. 2) Cook the garlic, onion, carrot, jalapeno pepper and green pepper, stirrin' frequently for about five minutes, or 'til softened. 3) Stir in the tomatoes, beans, chili powder, cumin, and rosemary. 4) Bring to a boil, then reduce heat and simmer, uncovered, for approximately twenty minutes. 5) Add salt. 6) Garnish with grated cucumber before servin'.
