becca's sweet cornbread

It should be entered into with abandon or not at all." __Harriet Van Horne ______________________________________Becca's Sweet Cornbread Ingredients: 1 and 1/4 cups all-purpose flour 1 cup yellow cornmeal 1 teaspoon salt 1 teaspoon bakin' powder 1 teaspoon bakin' soda 6 tablespoons butter, warmed to room temperature 1/2 white cup sugar 2 eggs 1 cup buttermilk 1 [8.75 ounce size] can creamed corn Instructions: 1) Preheat oven to 350�. 2) Line a 9-inch square pan with aluminum foil --- foil should extend about 2 inches over the sides of the pan. 3) Coat foil with cookin' spray. 4) Combine flour, cornmeal, salt, bakin' powder, and bakin' soda in a large bowl --- then set aside. 5) In a separate bowl, cream the butter and sugar 'til light and fluffy, then beat in the eggs one at a time. 6) Beat the flour mixture into the creamed mixture, alternately with the buttermilk. 7) Fold in the creamed corn. 8) Bake for approximately forty-five minutes, or 'til bread tests done. 9) Cool on a wire rack. 10) Once the bread is cool --- lift it from the pan, remove the foil, and cut it into squares.
