It should be entered into with abandon or not at all." __Harriet Van Horne ______________________________________Mount Crawford Mushroom Loaf Ingredients: 1 large onion, chopped 2 and 1/4 cups grated zucchini 2 and 1/4 cups grated carrots 1 pound mushrooms, chopped 5 eggs 4 cloves garlic, minced 1 cup breadcrumbs, divided 1 cup grated cheddar cheese 1/4 cup plus 2 tablespoons butter 2 teaspoons basil 1/2 teaspoon tarragon salt and pepper to taste Instructions: 1) Preheat oven to 350�. 2) Saut� the garlic, mushrooms, and onion in 1/4 cup butter 'til they're soft. 3) Combine 1/2 cup bread crumbs and 1/2 cup grated cheese, then mix with the mushrooms, onions, zucchini, carrots, eggs, garlic, basil, tarragon, salt, and pepper. 4) Press into a buttered loaf pan. 5) Sprinkle the remainin' bread crumbs and cheese over the top. 6) Dot with the remainin' 2 tablespoons butter. 7) Cover with aluminum foil and bake for about thirty minutes. 8) Remove the foil and bake for an additional five minutes, or 'til golden brown.
