Orange Glazed Beets

Ingredients:
1 pound beets
freshly squeezed juice of 3 oranges
freshly grated zest of 1 orange
1/4 cup unsalted butter
salt and freshly ground black pepper to taste
1/2 cup slivered almonds, toasted
1/2 of an orange
2 tablespoons fresh tarragon, chopped

Instructions:
1) Preheat the oven to 375�.
2) Trim the leaves off the beets,
but leave approximately one inch of stem.
3) Put the beets in a roastin' pan and bake for one and a half
to two hours, 'til the skins are loose and crinkly.
4) Cool the beets 'til they can be handled, then peel 'em
and cut 'em into 3/8 inch cubes.
5) Put the orange juice, orange zest, beets, and butter in a skillet.
6) Cook over low heat for twenty minutes, stirrin' intermittently.
7) Cook over high heat for two minutes, or 'til the liquid is reduced
and the beets are coated with an orange glaze.
8) Add salt and pepper to taste,
then turn the beets into a warmed servin' dish.
9) Sprinkle the almonds over the top.
10) Squeeze the orange half over all,
then garnish with chopped tarragon. Serve immediately.
