Libby's easy cheese and vegetable delight

" __Julia Child "Cooking is a creation." __Piero Selvaggio "'Tis an ill cook that cannot lick his own fingers." __William Shakespeare ______________________________________Libby's Easy Cheese and Vegetable Delight Ingredients: 1/2 lb mushrooms, sliced 1/4 cup butter, divided 4 cups shredded carrots 1/2 cup chopped onion 1/4 cup flour 2 and 1/2 cups milk 1/2 teaspoon salt 1/2 teaspoon pepper 9 lasagna noodles, cooked and drained 12 ounces sharp cheddar cheese, shredded 16 ounces cream-style cottage cheese 10 ounces frozen chopped spinach, thawed and drained 1 ounce grated parmesan cheese 1/2 cup chopped fresh parsley Instructions: 1) Preheat oven to 375�. 2) Saut� mushrooms in 1 tablespoon butter 'til tender, then remove from skillet. 3) Saut� carrots and onions in remainin' 3 tablespoons butter 'til the carrots are tender. 4) Reduce heat to medium and blend in flour. 5) Gradually add milk. 6) Cook, stirrin' constantly, 'til thickened. 7) Stir in mushrooms. 8) Grease a 9x13" bakin' dish and arrange three cooked lasagna noodles on the bottom. 9) Cover the noodles with one half of the cheddar cheese and half of the vetetable mixture. 10) Cover vegetable mixture with three more noodles. 11) Combine the cottage cheese and spinach and spread over noodles. 12) Add last three noodles. 13) Add second half of cheddar cheese and vegetable mixture. 14) Sprinkle with parmesan. 15) Bake for thirty minutes. 16) Sprinkle with parsley and let stand for ten minutes prior to servin'.
