ham 'n red eye gravy

" __Julia Child "Cooking is a creation." __Piero Selvaggio "'Tis an ill cook that cannot lick his own fingers." __William Shakespeare ______________________________________Ham and Red Eye Gravy Ingredients: 6 slices country ham, cut to about 1/4" thick, a little fat around the edges is good 1 cup freshly brewed coffee Instructions: 1) In a large cast iron skillet, cook ham for four minutes or so, dependin' on the thickness. 2) Transfer ham to a servin' platter and keep warm. 3) Pour coffee into skillet and cook, scrapin' the sides, 'til the gravy comes to a full rollin' boil. 4) Continue cookin' 'til gravy is reduced by half. 5) Serve ham and gravy over rice, grits, or fresh biscuits.
