Deluxe Chocolate Mint Brownies

Ingredients for brownies:
1/2 cup unsalted butter
2 ounces unsweetened chocolate, chopped
2 large eggs
1 cup granulated sugar
1/2 cup all purpose flour
1/2 teaspoon peppermint extract
1/2 teaspoon vanilla extract
dash of salt
1/2 cup chopped pecans

Instructions for brownies:
1) Preheat oven to 350�. Lightly butter 8x8" bakin' pan.
2) Combine butter and chocolate in small saucepan over low heat, stirrin' constantly 'til smooth. Set aside.
3) Beat eggs and sugar 'til light and fluffy.
4) Add the chocolate mixture, flour, peppermint extract, vanilla extract,
and salt. Stir 'til just blended.
5) Fold in nuts.
6) Turn batter into greased pan and bake for twenty-five minutes, or 'til a toothpick inserted in the center comes out with most crumbs attached.
7) Cool slightly before addin' toppin's.

Ingredients for toppins':
1 cup sifted powdered sugar
4 tablespoons unsalted butter, at room temperature
1 tablespoon milk
1/4 teaspoon peppermint extract
4 ounces semi-sweet chocolate, chopped

Instructions for toppin's:
1) Beat powdered sugar, 2 tablespoons butter, milk,
and peppermint extract in bowl 'til creamy.
2) Spread over warm brownies and chill 'til set, approximately one hour.
3) Combine semi-sweet chocolate and 2 tablespoons butter in a
small saucepan over low heat, stirrin' 'til smooth.
4) Cool slightly.
5) Pour chocolate toppin' evenly over mint toppin'.
5) Cover and chill 'til set, approximately one hour,
before cuttin' into squares.
