It should be entered into with abandon or not at all." __Harriet Van Horne ______________________________________Fried Green Potatoes Ingredients: 2 tablespoons olive oil 2 tablespoons canola oil 2 pounds red-skinned potatoes cut in 1/2" cubes --- you can substitute regular bakin' potatoes 1 large onion 3 cloves garlic 4 ounces fresh spinach [about 4 and 1/2 cups, chopped] --- mustard greens can be substituted for spinach 3/4 cup fresh herbs* of your choice, finely chopped 2 scallions, chopped 1 teaspoon salt 1 teaspoon pepper Instructions: 1) Heat the oil in a large Teflon coated skillet over medium heat. 2) Add potatoes and cook, stirrin' occasionally for twenty-five to thirty minutes, or 'til browned and nearly tender. 3) Chop the onion. 4) Mince the garlic. 5) Remove the stems from the greens and chop the leaves. 5) Chop the fresh herbs and scallions. 6) Add the onion to the potatoes and cook for three to four minutes, or 'til slightly softened. 7) Push the potatoes and the onions to the outer edges of the skillet. 8) Put the garlic in the middle and cook for a minute or so, 'til fragrant. 9) Stir in the greens, herbs, scallions, salt, and pepper. 10) Cook for about three minutes, or 'til the greens are just wilted and tender. *Note: you can use any combination of basil, chervil, chives, cilantro, dill, marjoram, oregano, parsley, rosemary, sage, tarragon, and/or thyme. Whatever appeals to your taste buds.
