It should be entered into with abandon or not at all." __Harriet Van Horne ______________________________________Peach Felicity Ingredients: 8 fresh peaches, pitted and sliced 1/2 cup brown sugar 1 tablespoon lemon juice 1 tablespoon lemon zest, grated 1/2 teaspoon cinnamon 1/2 tablespoon nutmeg 1/2 tablespoon ground ginger 1/2 cup all-purpose flour 1/2 cup quick cookin' oats 1/2 cup pecans, toasted 1/2 cup white sugar 1/4 teaspoon salt 2 ounces cold butter 1 cup heavy cream 2 tablespoons sour cream, whipped Instructions: 1) In a large bowl, toss the peaches with the brown sugar, lemon juice, lemon zest, cinnamon, nutmeg, and ginger. 2) Transfer peach mixture to a casserole dish and set aside. 3) In a large bowl, combine the flour, oats, pecans, white sugar, and salt. 4) Cut in the butter 'til the mixture is crumbly. 5) Sprinkle the oat mixture over the peach mixture. 6) Bake at 375� for about forty-five minutes 'til it's golden brown. 7) Whip the heavy cream 'til stiff peaks form, then fold in the sour cream and use as toppin'.
