It should be entered into with abandon or not at all." __Harriet Van Horne ______________________________________Peach Cake With Cream Cheese Glaze Ingredients for cake: 3 eggs, beaten 1 and 3/4 cups white sugar 1 cup vegetable oil 2 cups all-purpose flour 1 teaspoon salt 1 teaspoon ground cinnamon 1 teaspoon bakin' soda 2 cups fresh peaches - peeled, pitted and sliced 1/2 cup pecans, chopped Instructions for cake: 1) Preheat oven to 375�. 2) Grease and flour a 9 by13 inch pan. 3) Thoroughly beat together the the eggs, sugar, oil, flour, salt, cinnamon, baking soda, peaches slices, and pecans in a large bowl. 4) Pour batter into the pan and bake for about fifty minutes. 5) Glaze cake once it cools. Cream Cheese Glaze Ingredients for glaze: 1 three ounce size package of cream cheese 3 tablespoons whole milk 2 tablespoons confectioners' sugar Instructions for glaze: 1) Combine cream cheese, milk, and sugar in a small bowl. 2) Stir 'til the consistency is smooth, addin' more milk and/or powdered sugar as needed.
